April 10, 2022

Just a few updates.
Gardening is starting later this year, due to come very cold weather. We had a heavy frost last night and a hard feeeze Friday night. It looks like we might have yet one more night in the upper 30's in about 10 more days, that is as far out as the weather can predict and they are not right very often. I am in hopes that they are not right on this one, as well.
The Greenhouse is about half way assembled.  I hope to finish it tomorrow and then get some seeds started.  I want to test some seeds and start some for my garden boxes at the community garden. Just not sure how many I will be able to do, right now. 

Both my Hubby and I have had a few minor health issues to deal with over the last few weeks. We hope we have everything under control.  WE do hope to get some good news, Health wise, soon.

I know, it has been a while since I posted.  I am working on a few ideas but have not settled on ay one of them. I did make a few cards for Christmas last year, now I need to work on a few more, for Christmas in July.

Raisin Oatmeal Cookies

Raisin Oatmeal Cookies
Ole Country Bakery, Brooksville, MS
1 cup raisins
1 cup shortening
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. baking powder
2 cups flour
2 cups oatmeal
Place raisins in small kettle; cover with water and simmer for 2-3 minutes. Drain. Set aside.
Cream shortening, sugars, eggs and vanilla until fluffy. Mix soda, salt and baking powder. Add flour, oatmeal and raisins. Mix well.
Scoop desired size onto cookie sheet; flatten. Bake at 350 degrees for 15 minutes or until golden.

No Bake Cookies

This are a rich, calorie laden cookie that my family has enjoyed for over 50 years.  You can change up the flavors by adding in crushed candy or nuts or dried fruit.  

No bake cookies
 
1/2 C Milk
1/2 C Butter
2 C Sugar
3 C Quick oats
1 tsp Vanilla
1 C Peanut Butter
6 Tbsp Cocoa
3/4 C Chopped Nuts
 
   Put milk, butter, sugar, vanilla, peanut butter and cocoa in large pan. Heat and stir until butter melts and mix is smooth. Remove from heat, and add oats and nuts. mix well. drop by spoon onto wax paper. Chill until firm.

poor man's cake


This time of the year, I start to really crave foods that I grew up with. Comfort foods. I am not saying we were "Poor" but year, we were.  This cake was around when My mom was growing up and on their table often. Usually in early spring, before the cows were fresh and eggs were scarce. No frosting needed but if you really want to fancy it up, dust some powdered sugar on top.  Mom would make a caramel  7 minute frosting for it, because she loved it more than the cake needed any more sweet added to it.


Poor man cake
1/2 C Lard
2 C Sugar
2 1/2 C Flour
1/2 c Cocoa
1 tsp Baking Soda
1 tsp Vanilla
1 C Hot Water
1 Tbls Vinegar
Cream Sugar and lard. Sift together flour, Cocoa and Baking Soda combine vinegar, water and vanilla.
Add each in parts to the creamed sugar mixture. Bake at 350 degrees for 30 to 45 minutes.
From my childhood. Love this cake, it is a heavy cake. We never gav mom a chance to ice it, but any icing will work on it...
