Good Morning

 
 
Good Morning
don't you just hate it when you go get into bed because you are tired, but as soon as your head hits the pillows, you can't fall asleep? That's me tonight.  I will most likely take a nice long nap this afternoon, in the heat of the day.

I will be making Jerry's breakfast at 4 am. He wants to leave here around 5 AM to be at the new job before 6:30 Am which is 7:30 Am "There". Yep he has to cross the time zone line.. which is going to drive him crazy for a few days until he adjusts to it. He will be going to bed around 8PM just to get enough rest.
 
This job is to last about 4 to 5 weeks. We drove out to where it's at and, yes, we do think it will last that long because it is new construction.. There is a possibility that once this one is finished, he will be going on to another job with the same company. (keeping praying on that one)
 
Today, I plan on getting a few things done around here. First off, I want to open the vents and doors and let the camper air out until it starts to warm up outside. I need to straighten up the bunk room from where some things fell over from the travel... I just didn't want to work on it while Jerry was off yesterday, he was sleeping on the couch and was in my way. After I get all that stuff taken care of, I need to give our bedroom a very good going over and change the sheet on the bed.
 
I am thinking of putting together two smallish Chef Salads for our dinner tonight.
 
I asked Jerry if he wanted to shower before or after dinner since we have to use the shower house for a little bit, The shower diverter fell out of the bath rub faucet the day before we left Ten Mile.. and I have to make a phone call to change the address it's to be sent to, this morning.  I'll be putting together two "shower" kits for us.. one for him and one for me.  All he will need is his soap, a clean towel and wash clothe a T-shirt and  shorts and the flip flops we bought today to wear in the shower (that floor is rough on the feet). I'm also going to add his Deo to his bag so he can use it if he wants to.
 
In my bag I will have almost the same stuff, only I'll have a house dress that Donna made and I got from her Sister after she passed, and I bought sandals instead of flip flops since I was told by at least two different doctors not to wear those any more.  I think I will have both "Kits" in the wagon, ready to go to the shower house. I will also add a step stool so I can sit on it to get re-dressed in there. They have a plastic chair in each bathroom and I just can't get my leg up high enough to put on socks while sitting on one of those.

Uses for pool noodles

PROTECT WALLS---Cut a 1/4" cross section of a pool noodle, then slice it into thin strips. Hot glue them to the back corners of a picture frame to keep walls scuff free...
 
 
 
STORE BOOTS---Don't let tall footwear lose shape. Cut a pool noodle to the height of the boot, then zip it inside so the shaft stays upright...

Can't tell what that stain is? Still want to remove it? Try this sure-fire remover: Mix a teaspoon of 3% hydrogen peroxide with a little cream of tartar or a dab of non-gel toothpaste. Rub the paste on the stain with a soft cloth. Rinse. The stain, whatever it was, should be gone.

Hot Dog Buns

Hot Dog Buns
 

⦁ 3 C. all purpose flour
⦁ 3/4 to 1 C. water
⦁ 2 T. softened butter
⦁ 1/4 C. sugar
⦁ 2 eggs
⦁ 1 tsp salt
⦁ 2-1/4 tsp yeast
Instructions
1. Add the sugar and yeast to the water and stir until the sugar has dissolved. Allow this to rest for 10 minutes.
2. In a separate bowl, beat 1 egg and 1 additional egg yolk. Place the white of the second egg in a bowl, add 4 tablespoons of water and whisk this together. Put this aside until later.
3. In another bowl, melt the butter in your microwave.
4. Place the flour in your mixing bowl, add the egg and egg yolk, salt, melted butter and the yeast mixture.
5. Using the bread hook, mix this until the dough comes together and it all comes away from the side of the bowl.
6. Knead it until it is very smooth and elastic. Sprinkle lightly with a little extra flour every time the dough becomes too sticky to handle.
7. Return the dough to the mixing bowl, cover the bowl with plastic and allow the dough to rise for 60 minutes in a warm place.
8. Once risen, turn the dough out and divide the dough into 8 equal pieces.
9. Lightly flour your work surface and press each piece out 3 inch by 5 inch rectangles.
10. Fold the long side of the rectangle over the center, then the other log side over this. Turn the roll over and transfer it to a parchment covered baking sheet. Repeat this until all of the rolls are formed.
11. Place the rolls on the sheet with about half an inch between them.
12. Cover loosely with a damp tea towel and allow the rolls to rise again for 60 minutes.
13. Heat your oven to 375. Brush the rolls with the egg white mixture, bake the rolls for 15 minutes until golden brown.
14. Remove the rolls from the oven and transfer them to a wire rack to cool.

Prep time: 10 min |Inactive time: 24 hours
Yield: About 4 to 6 servings
•2 extra large cucumbers
•1 cup of packed sliced Vidalia or other sweet onion
•1/2 tablespoon of kosher salt
•1 cup of white vinegar
•2 tablespoons of granulated sugar, or to taste
•3 cups of ice cubes (about one tray)
Peel and slice cucumbers about 1/4 inch thick. Add half of the cucumbers in the bottom of a covered storage bowl, sprinkle with half of the salt and top with half of the onions. Repeat layers. dividing cucumbers, salt and onion in at least 2 layers. Whisk together the vinegar and sugar; beat in 2 of the ice cubes until melted. Pour over the cucumbers. Crush remaining ice and layer over the top. Refrigerate for 24 hours, drain, reserving liquid, and serve. Repack any leftover salad in a Mason jar with reserved liquid and refrigerate.
Cook's Notes:
Recipe may be successfully doubled. Substitute sliced red onion if you prefer. Also good with sliced sweet bell pepper added as well as a half teaspoon each of pickling spices, celery seed, mustard seed and crushed red pepper flakes, to taste, added to the vinegar mixture. Boil, then cool before pouring over the salad. After the 24 hour marinating period, transfer your salad with the liquid into a Mason jar to keep it more visible. Keeps well in the refrigerator.

Update on me (Billie) June 29

Update on me    
 
I had a great report from the doctor who removed half of my thyroid. All Clear, no signs of any cancer.
I go back the second week of August, after I get some blood drawn, to see if I will need to take any Thyroid meds.  I feel great and am slowly getting some energy back.
 
Jerry was not working from the Thursday before surgery until June 29. He's not making what he's use to making but at least he has a job to go to. I was able to get the camper cleaned up from his being home for three weeks and only the bare minimum getting done around here.
 
Jerry did mow the grass a few times. It grew rather fast and the campground only mows close to a busy weekend. Macon does not like stepping into tall(ish) grass and was trying to potty closer and closer to the camper even when we scolded him to move out into the grass. Macon has very tender feet.

The Union Square Cafe's Bar Nuts

The Union Square Cafe's Bar Nuts
 
2 1/4 cups (18-ounces) assorted unsalted nuts, including peeled peanuts,
cashews, Brazil nuts, hazelnuts, walnuts, pecans and whole unpeeled almonds
2 tablespoons coarsely chopped fresh rosemary leaves
1/2 teaspoon cayenne pepper
2 teaspoons dark brown sugar
2 teaspoons Maldon or other sea salt
1 tablespoon unsalted butter, melted
 
Preheat the oven to 350 degrees F.
Toss the nuts in a large bowl to combine and spread them out on a baking
sheet. Toast in the oven until light golden brown, about 10 minutes.
In a large bowl, combine the rosemary, cayenne, sugar, salt and melted
butter.
Thoroughly toss the toasted nuts in the spiced butter and serve warm. And
once you eat these, you will never want to stop.
 
Total Time: 15 min
Prep: 5 min
Cook: 10 min
Yield:2 1/4 cups mixed nuts
